How to make Boxty

As the old saying goes

Boxty on the griddle, Boxty in the pan, If you can't make boxty, you’ll never get your man

Introduction

Boxty is a traditional Irish potato cake, it is said to have originated during the Irish famine
Made with a mixture of cooked and raw potatoes, boxty was created as a way to use a few readily available ingredients to produce different results. It can take the shape of bread, pancakes or dumplings.
It can be fried on a griddle or baked in an oven; dumplings are boiled in a very large saucepan for hours, you have to turn them often to make sure they don’t stick together. Boxty can be served with, grilled rasher, sausages and eggs for a special breakfast treat, children sometimes eat it with tomato sauce.

When I am making Boxty, I find the dumplings are too messy and time consuming. The pancakes are much easier to make and you don’t need any boiled potatoes in the mixture, but the cake is the tasty easy to make and worth the wait. I also find that it tastes better the next day.

I am going to show you how to make the Boxty Cake you will need the following:

Ingredients

12-14 raw medium potatoes
3 cooked potatoes
1 lb Flour
2-3 teaspoonful of Salt
